Vegetable cooking spray
1 cup of uncooked long grain rice
four 5 ounce skinned, boned chicken breast halves, chopped
1 cup of water
1/2 (10 3/4 ounce) can of cream of mushroom soup, undiluted
one (1.25 ounce) package of dry onion soup mix
Coat a 12x8x2 inch baking dish with cooking spray. Place uncooked rice in bottom of dish, and top with chicken.
Combine water, cream of mushroom soup, and onion soup mix, stirring to blend. Pour over chicken.
Cover casserole, and bake at 325ºF. for 1 1/2 hours or until chicken and rice are done. 8 servings
