Homemade Hush Puppies

1 1/2 cups of yellow cornmeal
1/2 cup of all purpose flour
2 tablespoons of double acting baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1 egg, slightly beaten
1 cup of buttermilk
4 tablespoons of bacon drippings, melted
2 green onions,minced
2 cups of peanut oil


Combine all ingredients except oil in a deep mixing bowl. Let batter stand for 10 minutes at room temperature and stir. Heat oil to 375 degrees in heavy skillet. gently slide batter a teaspoonful at a time, into hot oil. Cook about 6 hush puppies at a time. Fry until hush puppies are golden brown on all sides. Drain on paper toweling. Serve hot with fish. Yields: 4 servings
