Marinated Tomatoes

1/2 pound of fresh spinach, chopped
6 medium tomatoes, peeled and thinly sliced, about 3 pounds
1/2 cup of vegetable oil
1/3 cup of chopped fresh parsley
1/3 cup of chopped green onions
3 tablespoons of red wine vinegar
1 teaspoon of salt
1/4 teaspoon of pepper
A dash of sugar

Line a 10x6x2 inch dish with chopped spinach; arrange tomato slices attractively over top.

Combine remaining ingredients , mixing well. Pour marinade over tomatoes. Cover with plastic wrap; chill 1 hour.

Serve tomatoes, using a slotted spoon.

Yield: 8 servings
