2 pounds of fish fillets
1 teaspoon of salt
1 egg, slightly beaten
1 tablespoon of milk or water
1 cup of fine dry bread crumbs
Cooking oil
Cut the fillets into serving pieces and sprinkle with salt. Mix the egg and milk in a shallow dish. Dip the fillets in egg mixture, then in bread crumbs. Heat about 1/8 inch oil in a skillet. Add the fillets and cook over medium heat until brown. Reduce heat and cook for 120 minutes or until fish flakes easily when tested with a fork. Drain on absorbent paper. 6 servings
