Sue's Best Zucchini

4 small zucchini
3/4 cup of shredded carrot
1/2 cup of chopped onion
6 tablespoons of butter or margarine, melted
2 1/2 cups of herb stuffing cubes
one 10 3/4 ounce can of condensed cream of mushroom soup
1/2 cup of dairy sour cream

Combine all ingredients. Put into a 1 1/2 quart casserole.
Bake, covered, at 350ºF. 30 to 40 minutes or until zucchini is tender, stirring once. Makes 6 servings
