3 large sweet potatoes
2 tablespoons of frozen orange juice concentrate, thawed
2 tablespoons of packed brown sugar
2 teaspoons of minced fresh ginger
1/2 teaspoon of butter
1/2 teaspoon of ground cinnamon
1/4 teaspoon of ground nutmeg
1/8 teaspoon of salt
Peel the sweet potatoes and cut into 1-inch pieces. Place in a large saucepan and add water to cover. Bring to a boil over medium-high heat. Cook for 15 minutes, or until tender. Check by inserting the tip of a sharp knife into 1 piece. Drain in a colander. Transfer to a blender or food processor. Add the orange juice concentrate, brown sugar, ginger, butter, cinnamon, nutmeg, and salt. Process until smooth. Return to the saucepan and heat through. Serves 4.
