Healthy Heart - Carrot Cake

3/4 cup of sugar
1 cup of grated carrots
1 cup of raisins
1 teaspoon of cinnamon
1 teaspoon of grated nutmeg
1 teaspoon of ground cloves
1 1/2 cups of water
2 1/2 tablespoons of margarine
2 cups of flour
2 teaspoons of baking soda
1/4 teaspoon of salt
1 cup of chopped walnuts

Preheat oven to 325F. Grease a 9x13 inch baking pan with margarine. In a small saucepan, combine sugar, carrots, raisins, cinnamon, nutmeg, cloves, water, and margarine. Bring to a boil. Reduce heat and simmer 5 minutes. Pour into mixing bowl and cool to lukewarm. Add flour, baking soda, and salt. Mix well. Stir in walnuts. Pour into baking pan and bake for 40 minutes. Makes 24 slices
